Air Fryer Twice Fried Potatoes


For two. For other quantities use 1 potato per couple, the upper limit being probably three potatoes that can fit in the fryer at one time. For crowds I plan to experiment with making a quantity of potatoes up slightly in advance and then finishing them en mass in the oven, but haven't actually tried that yet. Anyhow, for two people:

Cut a

  • Baking Potato
in half along the widest axis so you get two halves that are stable. Smear them liberally with
  • Butter
and then sprinkle generously with
  • Salt and Pepper
then into the fryer for

20 min at 400

Take out the potato halves and let them cool a little bit. Then scoop out as much potato as you can into a glass bowl while not harming the skins. If you have recently made Caesar Salad then use that bowl to get some extra goodness. Once you have your potato in the bowl add
  • 2 TBSP tzatziki (or plain yoghurt or sour cream)
  • 1 chopped up green onion
  • 2 slices bacon, nuked a bit to get the grease off and then crumbled
and mix it all about to somewhat, but not totally, mash the potatoes. There should be chunks. Then scoop the mixture into the potato skins and amuse yourself until it's almost supper time.

Into each potato half stick

  • a wedge of good sharp cheese

Back into the fryer for

10 min at 400

Potatoes are ready!
